When we built Liquid Sunshine Daydream, we were looking for a great heat with a unique flavor profile. Scotch Bonnets are perfect for this purpose.
Scotch bonnets are different. They hit you with this quick, natural sweetness before the heat even shows up. It is not sticky sweet. It is clean. You get a bright, fruity kind of flavor, almost tropical, and then the fire kicks in behind it.
We only use yellow scotch bonnets. Not red, not green, not orange. We wanted both the flavor profile and the color profile to be pleasing, and a green or red pepper would've resulted in a muddier color.
Scotch bonnets come from the Caribbean. You find them in jerk seasoning, in hot pepper sauces, in anything that needs real heat without losing the food underneath it.
That is why they work so well with lemon.
Lemon hits fast and sharp. Scotch bonnets hit fast and sweet. When you put them together, you get a sauce that jumps out at you right up front. Lots of heat and flavor. Usually, when people taste the sauce at our booth we get a very consistent reaction: Wide eyes, an "Oh wow", and everyone else at the table turning to look at them.
Liquid Sunshine Daydream is simple for a reason. No sugar, no gums, no fake stuff to hide the flavor. You do not need it when you start with the right ingredients.
